How do I get into the Wizardry games ? I've never even played a 'blobber' and don't know where to start

Experience inc. games like Demon Gaze are pretty easy to get into if you're okay with weeb pandering.

If you're into a more western aesthetic The Dark Spire is a very good pick but incredibly easy, after the initial 2 hour grind for basic gear, but it's just fun. kinda plain in terms of combat/difficulty tho.

Dungeon Travelers has a great class system but once again a Japanese game with a lot of fan service.

Strange Journey is SMT so you've got the monster collecting mechanic BUT it's closer to Wizardry in its difficulty/tricks compared to the others.

fyi if you really wanna play wizardry itself many people swear by the psx ports of the first three. they're japan only but have a fan translation
