The difference being that Rome's infrastructure was used well-after maintenance had ceased for it and sometimes the stonework got cannibalized by people who immediately needed shelter with quality masonry. I admit, I don't know what China has done to keep their castles so well maintained, especially through so many social upheavals and shifts in power, but the point is: it has benefited from continued maintenance, and possibly never really getting sieged in the first place.

Western Europe were backwater ex-Roman territories up until the Roman Empire collapsed in 1453.
