It shouldn't matter if you have two ot for Evercold since ot can lower the enemies' damage. So, having an ot as your main tank will accomplish the same thing as having a main tank as your mt since either way you're taking less damage which is what the parry does.

For WHM you have to actually restore HP with your GCDs, and optimizing that can mean spending time doing single target healing on individuals instead of doing group heals so you can get as nuch gas as possible for your Sanctuary button. This is all skill that doesn't transfer between jobs and mostly can't be botted. So they're fuming. Everything they worked so hard for is crumbling.

It's almost its own thing entirely and as such has less Dawntrail/7.0 baggage to tussle with. It's a good patch and I'm glad Krile finally got that focus she deserved.
