It allows you to maintain your facing while guarding+moving a short distance, and it can be used to activate offensive guard plus it has the properties of negating the slight amount of knockback that some attacks have and allowing you to attack or perform another action sooner than if you regularly blocked. Other than that you can do a large backhop by holding back while you hit A which can save you in some circumstances, and you can do the running attack if the monster gets too far away (cancellable with a guard with R2 if you're about to eat shit). Also maybe consider using quick sheath. You won't really need it a ton but it is very useful against a few endgame monsters and knowing when to sheath vs guard to optimally play is a good skill to have.
