I like how most of his dialogue has actual meaning to it even if it appears random at first, because it'd be very easy to make a character like him purely nonsensical, but Toby managed to walk a fine line when writing him. There are so many great details when it comes to Spamton, and I like that despite how much info you're given about him and his past, there are enough things kept vague that it leaves room for speculation. It feels like solving a puzzle trying to figure out what he's saying at times and what exactly his motivations are, and I get a lot of enjoyment from that. Of course, I enjoy his fights, music, and design a lot too.

Sure, "ooohhh he clawed his face off" is edge-wank but I think it's a hint of accidental genius by taking away the character's defining trait(his expressiveness) to show how his single-minded contempt. I feel the same about Mettaton's character focusing on him repressing everything he can(minus BP's betrayal) in order to protect himself, just like canon Mettaton would. I can respect Undyne being fully feral, because of course she wouldn't cannibalize if she could help it, but I...feel like something's missing.
