Because everything they don't like about Sonic being such an extreme level of "Free", is basically equalized by Knuckles or even Blaze being so rooted in 'duty' that they basically have no freedom at all. So it'd be like, you can't do what you want with Sonic because muh freedom, but you also can't do what you want with Knuckles because muh emerald, so then what are ya gonna do? It's not really a case of "this character is interesting, so their opposite must be boring", because it doesn't really work like that. Sonic embodies a specific theme, so Blaze embodies the polar opposite analogue to that theme. Is one theme inherently more interesting than the other? That's like asking whether hot or cold is better. It's just a matter of personal preference.

The way I see it, shonen characters like Goku or Luffy have roots in being cartoon mascots like Mickey getting into wacky adventures. But the existence of the Superhero archetype through Superman challenges those characters to be more morally righteous and heroic themselves, rather than just forces of nature causing trouble or whatever. And so Sonic exists as the resulting example of that. A force of nature embodying "chaos" but in all the best ways that make him ideal as a mascot, a Paragon figure. Basically blending what Mickey Mouse originally was with what Mickey Mouse became over time.
