To be frank you can't go wrong with any of them. Outside of what you're eyeing with Sorcerer is a popular choice because it ensures you'll always have a full-value arcane caster in your party, which is only achievable otherwise if you always include a certain companion in your party. If I absolutely had to pick one for a first-timer I'd probably go with Paladin. A versatile class built around a simple concept that has enough meat on the bone to keep you well-fed even when you familiarized yourself with the game already.

Any of you anons use the "Random Spawns" mod with random buffs? I don't think I can use it amymore as it's been causing way more problems than I wanted. Not for combat, but for after combat. As some allies will have their buffs active and the effects will still occur. It even got to the point where Astarion was inflected with madness, got random buffs, and I couldn't talk to him at camp because he had silence and radiant aura on. I had to use an explosion cheat to kil and ressurect him and some others to fix it. I want more difficulty, but not at the expense of possibly breaking the game entirely.

The biggest downgrade will be your sudden inability to Jump to the highest platforms and Throw even some of the heaviest enemies. Don't forget to get the Club of Hill Giant Strength from the Arcane Tower in the Underdark. I "only" raises your STR to 19 but it's very useful to extend your party member's Jumping distance or even turn one to a pack mule if needed.
