But as someone who has PvE/PvPed everything at different points I would say in terms of fun:Holy Pally > Holy Priest > Resto Shaman/Resto Druid > Disc. Priest > Monk > Evokers. Biased on Paladin because its my main. Having three specs is great. Having some of the most powerful utilities in the game is great. Plate armor is great. Being in the actual fight in melee fucking shit up instead of watching raid frames in the corner is great. Being able to bubble is great. Holy Priest on the other hand is the opposite but in a way being able to take a whole raid from 1% to 100% is fun if you're into raid frame watching, sure its the most 'generic' of the healers but its also one of the most consistently good and has some great "Im the biggest fucking healer" moments. Resto's are boring imo, HoT isn't engaging. Apply heals, go AFK, repeat when they're about to expire. Druid gets useful mobility/utility in content, Shaman is a bit more deep than Druid though. Disc Priest is the same but with the tedium of mashing 1/2/3 for damage. Evokers don't work because this isn't Tera.
Kinda sad pet battles are going away but I understand, the combat portion is irrelevant to 90% of the players...

You didn't hear it from me but Evoker is getting a tank class and Dracthyr is getting a bulkier form, they're going to get some unique abilities including the ability to fly while carrying players as well as a combat ability to leap and carry a player or NPC with you (works in PvP too for enemy players). Finally the tank can physically drag the DPS players out of the red circle.

Aff is the only lock spec now where you can genuinely do better by being better, all the others are just so streamlined most people will be doing about the same.
