I watched a few recap videos of romhacks which happened to be nuzlocked (supposedly; I don't know, that's how little I cared, I just watched for the challenge the romhack brought)

I consider "professional" gamers complete jokes but what you said describes most professional sports. I mean, have you seen the ridiculous rulesets professional sports have these days? Football heavily restrict how you're allowed to set up your formations, Nascar is a safety pen hollow shell of its former self(understandable given how lethal things can get but still), Chess has a completely made up "castling" rule as well as that nonsense that is the "en passent", Soccer is so bloated with artificial rules that 50% of the game is trying to bait the other team into incurring a penalty, etc.
Nuzlocke is stupid and childish but the rulesets for it are fairly solid

professional: a person engaged in a specified activity, especially a sport or branch of the performing arts, as a main paid occupation rather than as a pastime

if he's making a living off of videos about nuzlockes, then by definition he would be a professional. one could argue that he should say "professional youtuber", "professional streamer", or "professional content creator" but at the end of the day he is, by definition, a professional
if you just play a lot of nuzlockes in your free time without streaming or making content and still call yourself a "professional" then that's just wrong and cringe, but if nuzlocke-related content creation is a primary source of income, then i don't think it's pathetic or wrong to call yourself a pro nuzlocker

Fairness is good and all but not all sports can really be called such. One team gets to go first, not all cars are lined up at the front, and all team based sports are inherently unfair due to team lineups being so heavily money-based.
For some of the sports that are truly fair and completely skill-based you have a point. Still a goalpost move tho.

They're just an offshoot of speedtrannies. Speedrunning Pokemon games is a psychotic endeavor because of how random pretty much everything is, it's not fun for anybody involved. So nuzlockes became the better option for the same group of autists, but since time doesn't matter in nuzlockes, they started measuring e-peens by the number of rules they can shove in a single playthrough.
