Every pokemon can be giant (dynamax) and gigantamax isn't bigger it just changes the visual design instead of simply sclaing up.
Only exception being Zacian and Zamazenta, they can't do it.

I really should play them at some point, but I find it hard to when I constantly hear that they're shit, and they don't have the national dex.

every time I cross-reference what pokemon aren't in SwSh with my favorites list, I get bummed out. And frustrated.

Gigantamax changes the appearance, usually to something giant theamed, and gives access to signature max moves to whichever pokemon has it.
For example regualar max ghost move lowers defence as a secondary effect, but if used by the mouth of hell Gengar it trapps instead

It's some kind of gene or innate characteristic or something like that which some of them have (Don't remember the exact reason but it's something like that), those with it when you Dynamax them will change into a different form instead of just simply getting bigger.

There was DLC where you could get materials to make a soup that when fed to a Pokemon that can Gigantamax will make it have that gene, or remove it if you feed it to one that already has it. Also it was kinda funny that this DLC had you eat the soup too and had the NPC flat out ask you if you can also feel the Dynamax energy swelling within you as a small red cloud spins around you for a second... only for that NPC to say that you are basically lying if you say yes because it has no effect on humans. Felt like the devs trying to slap down people who would try to claim it can make humans giant... not like that stopped artists.

I wouldn't say they're shit, they did some things well, but they are far from the golden era of Pokemon games. Might just be meh at worst, but I wouldn't say they are bad games.

That sucks :( The majority of my favorites made it in, especially with the DLC. Though it really sucks for me that the Fennekin line did not.

It's not that they can't do it, it's more that their very existence is to nullify/combat Eternatus's power, which is what basically every other Pokemon is borrowing when they Dynamax. Both Zacian and Zamazenta's signature moves deal double damage to Dynamaxed Pokemon.

At least above ground, under ground some seem to be able to sustain it longer/indefinitely as long as they are in a general area. Also a very very small amount, such as Calyrex, can Dynamax on their own. The game still restricts you to standard Dynamax spots for gameplay reasons, but lore-wise he's Dynamaxing under his own power and not by borrowing Eternatus's power from a Power Spot. This is why instead of red, he has a blue hue around him and blue clouds when Dynamaxed.

How did you come to that conclusion? The dex isn't trustworthy, but that doesn't mean really big Pokemon would be harmless. Those two things aren't related at all
It's just common sense that a Pokemon hundreds of feet tall would easily cause a lot of damage

It's always been like that both in the anime and games. I can't think of any official examples to the contrary.
The Pokedex even has it's footprints recorded in gen 3-5.
I think it's reasonable to treat it as an under-drawn design element though. It's not like Pokemon is consistent with minor detail work.
For example Jolteon's paws changed from gen 4-5. Going from no pads to one. Espeon is toeless on it's front feet except for all the times the anime draws it differently. It's really not something Gamefreak cares about.
