Because you only have 6 Pokemon in team - That's 6 abilities, 6 items and 24 moves to not only be able to commit to your own strategy but also defend yourself from everything that opponent can throw at you. Too diverse meta means that you may lose purely based on matchup, because in your limited toolkit you could not fit tools to beat everything. Pokemon having bloated, uniform movepools also flattens diversity in negative way - in earlier gens you could consider "weaker" option due to it having unique combination of elements at disposal but when everything learns all the best moves then what's the point?
