the magic and whimsy are important to having the pokemon world be as comfortable as they are to idly dream about and play within - wanting the people and pokemon to bleed when they take damage because real people and animals bleed when they take damage is small minded and actively disruptive to the setting and often the message of the stories being told (that strength lies in the ability to create bonds with others, both people and pokemon, despite being worlds apart)
if you need hyperrealistic blood to give your scenario and setting any kind of "mature" feeling then you're incapable of writing for pokemon; follow the laws of the land - they're more than capable of telling those kinds of stories and setting those kinds of stakes on their own.
