Some locations were stunning and the ancient technology way before even the games started gave the world a certain epicness(?) also the airships were amazing, from Lawrence's steampunk-like to J's military scifi one

Cool, I wish you luck. I started work on a new chapter a couple days ago and I wanted it to be pretty fast moving and short like the other 2 chapters I had written so far, but I ended up writing 1K+ and counting words of nutrition instead.
I guess I'll just make the chapter bigger, no one is really going to mind a chapter closer to 5K, heck I personally don't mind reading 10K long chapters so maybe I'll end up beefing out some of my current chapters to add more stuff.

Canon says they eat pokemon meat, so why wouldn't they eat animals?

The answer I went with is yes, but most regions primarily supply lab-grown meat for almost any species and purpose in the modern day. You'd only eat a real Pokemon if you had no other choice, lived in an extremely remote region, or you were harvesting things like Slowpoke tails that don't harm the Pokemon themselves.

I thought about how meat dishes in Pokemon must taste like.
A magikarp must be extraordinary fatty. Their scales are tough but they don't move much so their muscles must be terribly underdeveloped. The fat might also serve as energy reserves for an evolution.
Wild magikarp are probably too oily to eat, better served as a fuel source like whale oil or candlefish, but carefully raised would result in meat that can literally melt in your mouth with a sweet and rich buttery taste.
The finest stock can be rendered from the "crown" fins of a magikarp. It yields a stock that has a clean and delicate briny flavour. Magikarp risotto served on a deep fried scale is one such dish that utilizes all parts of the animal. A celebration of a truly magical fish.

I like the idea of Pokemon as an ecosystem but I’m not brave enough to go full Beastars with it so I just made up a class of Pokemon that are basically animals that are safe to eat.

I'd hate to be one of the scientists forced to deal with the fact Pokemon are friendly cartoon animals that don't operate on real logic. Like you spend a fortune sticking hidden cameras on prey Pokemon and all predators do is bite them until they faint then leave. Anything that becomes life threatening, people think that criminals wouldn't attack a trainer because muh honor code but that same people forget stuff like Hugh's sister plot or Lance nuking a grunt or Ghetsis almost killing you with Kyurem and so on.
