Too autistically answer the OPs question it depends.
First gen GB games were either meant to just be monochrome, it doesn't matter the color the GB just happened to be green. However some games were indeed meant to be seen as green, it looks wrong in black and white or other colors.
Second generation games when the Super Game Boy came out is when you started to have many developers think of the SGB colors as the intended version, if a game has Super Game Boy borders compatibility then yeah that's the intended version of how it was meant to be played. I'm not saying SGB enhancements like say DK94, even if all it includes is a border, it was meant to be played on SGB.
Third gen GB games after the game boy pocket came out are meant to be played in black and white, they actually look worse off on a green screen game boy and even on Super GB.
Fourth Gen GB games (black cartridges) Depends. Most are meant to be played on GBC, but there are some exceptions, most of the games that were converted to GBC like Wario Land II and even Pokemon Yellow.
Fifth gen GB games (GBC only) are meant to be played on GBC.
sixth gen GB games (early GBA) are meant to be played on GBA without backlit.
Sevent gen GB games (later GBA) are meant to be played on a backlit GBA (Sp/Micro/GBplayer)
Eight gen GB games (your downloaded rooms) are meant to be played on your mothers vagina.

When there's no color, there's only contrast. In other words, what allows you to perceive "shapes" in a grid of pixels is the relative light/dark difference of each pixel with its neighbors. The tint of this "black and white" screen doesn't affect this, but the human eye is more sensitive to certain colors than others. For example, we can see many more shades of green than blue or red. If this would affect your perception because of the tint is debatable, because the Game Boy can produce only a few different tones anyway. But regardless of the tint, I suspect your mind would "equalize" things anyway after playing for a few minutes.

There were probably a few examples where the developer expected the game to be that pea soup green of the original Game Boy, but for the most part the assets were just developed in black and white monochrome.
The advent of the Super Game Boy complicates things a bit, because some games absolutely used it for color, and to varying degrees. Even if a game wasn't made for the SGB, the dev had to expect some players might experience the game using one.

For games that don't rely on SGB features, it really doesn't matter too much.

I prefer the green palette for DMG games because it's how I would have played them. Nonetheless, when playing them on AGB, I would always set it to grayscale and didn't mind too much.

Another one of these is Pokemon Trading Card Game. It runs much slower if you play it on a SGB or original GB, and as a menu-based game, that's very significant. I never noticed this, as by the time it came out, I had already had a GBC (specifically the extremely kink Pokemon one that was bundled with Yellow), so I didn't notice this until years later via emulation (and only because I wanted to see the "Medals border" when playing this game on an SGB, but now I think I understand why my brother doesn't have as much love or nostalgia for Pokemon TCG GB as I do, since he still only had an original GB when he got his copy of it.

If you put a GB cart into any piece of official hardware that isn't an original GB it will be gray and not green. If being green was so important they wouldn't have released GBs with non-green screens and other hardware playing GB games on full color screens would display it in green as well.

Pocket is the closest to grayscale but still has a green tint, Light is light blue.

Both colorize by default. Grayscale is one of the optional palettes.

The default palette is not grayscale. Pic related. Grayscale once again is a palette option. SGB even allowed you to create your own palette.

At the end of the day Gameboy games just have four shades and you can colorize them however you want.

Thats how it was with old Gameboy consoles. Always had to chase for a light source(unless you had that light plug in tool) but always had to keep on a certain angle in order to avoid the light glare and also the visuals had insane ghosting. At least with emulators right now we can simulate how the visuals would have been if we didnt have to deal with these issues

I have distinct memories taking my gameboy to school trips in the 90s, and trying to find some shade with my nerdy friends so that we play pokemon properly.
The things you are talking about are textbook definition of rose tinted glasses. I dont know if the sun got more "sunnier" in the 2024, but gameboy's glare and ghosting were always there, and they were always annoying.
Perhaps you remember it like this, because back then you knew no better than the gameboy tech and it felt wonderful, and also because the mind tends to filter out the "bad noise" from your good childhood memories

The monochrome palette of the original Game Boy was inspired by the Japanese comic industry, known popularly as manga, where the style is black and white. Nintendo was pressured by its Western branch to hastily cobble together the GBC to appease Westerners, but the original Game Boy remained the handheld of choice for Japanese gamers until the GBA came out.

According to TCRF removing the check for the save version doesn't have any known side effects. Could've been a safeguard since they're separate roms or they intended to make changes that didn't end up happening.

You know, I've seen the other thread about JP fan hacks reverse-translating pretty different EN ROMS (one example being Zelda II arguably being better on NES over FDS) and I have to wonder, has anyone tried porting Japanese GBC-version text to the English-only GB Wario Land II? It's arguably the better version. The game got delayed twice -once for SGB support and again for GBC- and the latter particularly feels rushed. In retrospect, I think Nintendo of America/Europe made the right call releasing the original version before GBC came out. You'd just need to port over the chapter/save text I think, maybe leave penguin and logo graphical edits optional. Seems relatively simple.

The only actively difficult scenario was trying to play in a car at night, pausing in between streetlights.
