Nintendo ended up getting the first home port of Street Fighter II: TWW on the SNES, and at the time, it was one of the best selling home console games. But the Genesis did get Special Championship Edition and SSF2. Most of the SNK fighting game ports ended up on both consoles. I would say as far as 16bit fighting games go, there was a pretty good split between the Genesis/ MD and SNES/ SF.

Then they went on to release Ultimate MK3 and MK Trilogy month later. Like surely they knew these were planned already by the time the first interview was made, why would they make fun of something they were about to do themselves and release 3 versions of the same game.

Ultimate Mortal Kombat 3 on the SNES and Genesis is a stripped port of Mortal Kombat Trilogy. The Saturn version of UMK3 is a decent port of the arcade game, though maybe not as close the PS1 version of MK3. The Saturn port of MK Trilogy might be the best CD version of that game since it has all the moon physics fixed from the original release of Trilogy on PS1 and might have the Aggressor glitch fixed as well. The PC version is really clean and has a fan port but you can't have a controller plugged in while booting or you will get no music.
As for MK1 and MK2, I say Genesis and 32X respectively. Sega CD version of MK1 might win for versus mode but fighting Shang Tsung with the load times is nasty. MK2 Saturn port is trash, PS1 port is Japan exclusive and has zooming a la Art of Fighting (kinda cool) but has nasty load times and sound effect issues.

It has slowdowns, input delay and missing sound effects. The gameplay bugs like physics and infinites are fixed indeed but they were fixed in the green label PS1 release already. Considering that Saturn also has longer loading times, there is no reason to recommend it over the green label PS1 version.

For me it's Genesis UMK3 or PS1 Greatest Hits MKT. Played both to death. I actually prefer the music in Genesis version, especially that percussion in Soul Chamber.
I don't like the arcade/Saturn UMK3 because it lacks Rain.

You're talking nonsense, both systems had pretty even fighting game libraries. Street Fighter, Mortal Kombat, Fatal Fury, Art of Fighting, Samurai Shodown, Primal Rage, even shit like fucking Clayfighter, Shaq Fu and BALLZ were all on both. TMNT Tournament Fighters was a different game on each system for some reason, so was Justice League Task Force. They also had completely different DBZ and Yu Yu Hakusho games, it can be debated which ones were better.
The main thing the SNES had over the Genesis was of course Killer Instict, though I think Power Rangers Fighting Edition is also worth mentioning. Meanwhile the Genesis got a fucking Virtua Fighter 2 port of all things before it died.

There's a bunch of decent japanese fighters on SFC/SNES, other than SF ports. Gundam W Endless Duel being probably the best example. Nothing of this caliber on the Mega.

Nah, how about piracy? I played a bunch of jp-only games back then thanks to bootleg carts I could easily find at used games shops and rentals.
Though I never came across Endless Duel myself, I know people who did.
However I did get MMPR Fighting Edition back then. Another good fast-paced fighter by Natsume, which is what they used as the basis for Endless Duel.
