What are some good or at least interesting games for non-IBM computers? I'm talking about machines like the Apple II, Commodore 64, ZX Spectrum, Amiga, Atari ST, TRS-80 and retro Macs

In no particular order of interestingness. Played plenty of other systems, but the most I'd recommend for those is arcade games that you can emulate on MEME.

Gemstone Warrior (multi non-ibm), decent early action adventure for PCs. Largely about item usage from the loot you find. Has a pre-set layout, except for the final section that randomizes a set of rooms. The final section also forces you to take a different route back. Japanese versions have tinier slightly cutesy graphics.

Rise Out (MSX 1), a decent lode runner clone that isn't too difficult and isn't completely silent.

Olion 80 (PC-8001), cockpit space shooter on very inappropriate hardware. Not as impressive and full-featured as Elite, but still impressive regardless and due to not attempting 3D ships it runs at a decent pace. Has a ship sprite editor that is used to full effect in its joke version Onion.

The Alien Island 3D-Version (PC-8001), early PC FPS from a non-FPS country, so that's a curiosity in and of itself. Has dungeon crawler movement so it is actually pseudo real time like certain dungeon crawlers and RPGs. Adds a surprising amount of mechanics and will tell you to kill yourself if you fucked up.

Knither - Demon Crystal II (Various Japanese 8-bits and a switch port), ladder "platformer" that is more of a simple puzzle game about locked rooms. You use limited magic to kill enemies, but it's never too limited. Less cryptic than its predecessor, but if you miss an important item you will still game over as levels aren't replayable (iirc it should restart you in the same world though).

Shock Trooper (CoCo), slow and plodding platformer (it has a tiny useless jump) with large graphics. More about figuring how to deal with the traps and enemies in an efficient manner before you die of radiation or just being vaporized. You can cloak yourself, but that increases radiation.
