I rlly like when games set in WW2 era make you sneak around alone in an environment surrounded by Nazis, because of historic context it feels especially dangerous to do. The best kind is where you can beat the entire level stealthily, but if an alarm breaks out then you can go Rambo and mow everyone down epicly.
I wonder if there are any games similar to GoldenEye or Thief that utilize such scenarios. There's a game similar to HItman that scratches that itch, you can be entirely stealthy or go rambo, but I cannot mention it because it's from 2007.

You can complete most of the levels at least partially through stealth, Norway and Dam are two standout levels off the top of my head that can be finished 100% without anyone really noticing, and there's actually a benefit to doing so in-game because if you get caught, an alarm goes off and more enemy reinforcements spawn in. This guy's playthrough does an excellent job at showcasing what's possible.

Not a bad suggestion actually, especially with mods which tend to be more challenging. There's many instances where you're likely to run out of ammo, and you have to either avoid certain rooms or at least bait a couple enemies out of a room without waking up everybody and getting overwhelmed. It's a whole process that starts with letting a couple of them see you, getting them to follow you through the door, and then waiting for the door to close before you start stabbing them. It's not really stealth, but with how doors and enemy alerts work in Wolf 3D, you can really stretch the limits of the game's mechanics when you're desperate and have to play passively while you scrounge for ammo or health.

It isn't exactly a 1st or 3rd person game nor are they stealth games, but Soldiers - Heroes of World War 2 and that entire line of games (though the later ones become more about regular war). Real-time tactics gameplay where you can control singular characters with inventories and are able to get into vehicles (that also have inventories, so you can ferry munitions). There are definitely regular war scenarios, but you generally tend to play it like a single saboteur/group of saboteurs. The 3 saboteurs spin-off (of which one isn't retro and only the first ever localized outside of squatland) are obviously more focused on the saboteurs part when it comes to mission design. It's light on true stealth segments, but in a lot of missions that don't outright have a timer you can just use your one guy to take down parts of the map or just jack a tank.

There's also this odd quirk where you can carefully position yourself to essentially lean around corners to see if there's an enemy there, all while not having that enemy see you if there happens to be one.

I second this. Played it on release, didn't understand how to play tactically (I wasn't so bright as a kid), so I had to come up with ways to cheese fights.
