the real answer: play Pong on an Atari 2600 with paddle controllers. Or at least find some kind of modern day paddle controller and emulate it.

On a modern TV?
Atari 50th Collection probably has the best recreation and presentation of 1972 Pong. I can't think of a more "definitive" version other than the original so that would be my answer.

My favorite take on Pong is the PS1 version though.

Well, in the case of that pong machine it's using physical paddles and physical ball so you are using digital input to control a mechanical operation.

Makes sense why there is some input delay. Still think it's really neat though and would love to try it.
