Why did the Amiga suck at fighting games? Even the Commadore 64 had yie ar kung fu but the Amiga’s best fighters were choppy ports of Mortal Kombat and Street Fighter

You don't need to expand the question any further, and the answer is that Europeans suck at making video games. Why do you think the defining legacy of the system are those weird porn games?

Oh boy did it suck. There are a lot of amazing games on the Amiga, but fighting games are not it's strong suit. Bad devs, ports done on the cheap, Eurojank, lack of understanding about what makes a good fighter (possibly vs the systems' capabilities) Typical mistakes from the Britsh computer industry of the era. Said industry got a lot of things right, but it was really hit or miss.

That said, Street Fighter II was... interesting. Played very differently to the real thing of course. And was still not good. But an experience to have, nonetheless

There's also Body Blows. I liked that at the time. And the best fighter on the Amiga is meant to be Shadow Fighter. If you don't count IK+

Amiga wasn't really a machine for fighting games. Keep in mind that games made for it used only one button. It could technically do 2 buttons, but a handful of developers used that since almost no one had a two button joystick at the time.

I'll list some decent Amiga fighting games:
