IDK if it's a "weird" port, but Sega Ages Dynamite Deka is very interesting, perhaps teetering on weird.
This is perhaps the earliest game to employ a "retro graphics" option. You can choose to play with the new graphics, or the original Saturn graphics. It isn't on the fly, but the first game I can think of that did this in the west was Halo: Anniversary Edition on 360. If this is the first game to do that, then it's an interesting footnote.
If anyone knows an earlier example than this, let me know.

Panzer Dragoon, which I think came right after Dynamite Deka, also had the retro graphics option.
Nights does too, I believe Nights was originally meant to be part of the Sega Ages series but then decided to make it a stand alone release, I think due to releasing a special edition with a reprint of a hard cover book from the Saturn days.

Neat, I never played the Sega Ages version of this but that's above and beyond to add in the Saturn graphics especially because these were budget games. I forget these were released really late into the PS2's life though (2006) so Saturn nostalgia would have been a thing by then and be a selling point.

Doukyuusei 2 on Super Famicom is mind boggling on many levels. Also while looking for picrel I discovered that elf made a strip mahjong game for the Game Boy Color, except instead of the girls taking their clothes off when you win, they dress in lascivious cosplay instead. Not a port of anything in particular, but I would feel remiss not to mention it.

Granted, Evolution isn't a complicated RPG to begin with, but you don't see too 3D RPGs converted to 2D. It being on the Neo Geo Pocket Color is icing on the cake.

I don't know how far this panic was but I believe that XBOX was responsible for the downgrades in HL2. Compared to the Big Budget releases of the time HL2 is a rethread of the PC trends of the time, despite its “next gen features” it feels like last gen compared to other PC releases of its time.
