What are some games that have a single-player version of their multiplayer mode, where there is a series of pre-defined matches with/against bots that you can ultimately "beat"? Unreal Tournament has this. Timesplitters 2 and Future Perfect have a mode for this. Perfect Dark has a mode for this too, but it's kind of hidden in the menus and lacks bells and whistles.
Quake 3? It's got some cutscenes and rolls credits once you beat the monk in a 1v1 duel with railguns.
Battlefield 1942. And thank god for it, since playing with the current playerbase sucks all the fun out. At least with the bots stuff like boats are still viable. That's more customization than what UT gives you. I know because a friend of mine and I used to team up with two other guys and do 4VS16 matches on the Facility map. Due to being outnumbered and outgunned 4 to 1, it usually ended up with us bunkering down in the bathroom and unloading on anything walking through the door. Occasionally we would need to venture out a bit to get more ammo off of the dead and try to rush back inside before getting gunned down.

Different genre, but the Pokemon Stadium games' singleplayer modes are basically this, although in at least some cases the opponent can read your input, and many opponents have absurd stats/movesets/teams.
