Why has Souls/Elden combat become stale?

Because they've been making the same game for over 15 years and the most significant evolution of it was letting you jump from standing position. At the end of the day I love the original Demons and Dark Souls but their combat system is barely more complex and involved than Skyrim's.

I'm not sure if that's the right way to put it.
But I think they've maneuvered themselves into a corner from the beginning by giving the player the ability to i-frame through attacks at will.

I dont think It has become stale(?) It still is a combat system that demanda you as the player involve yourself and put effort into It instead of simply mashing. There are yes easier and harder ways to face Bosses and create builds, but every play style feels unique and has its own challenges

i-frames are such a dogshit piece of game design. It streamlines the combat in such a way that it doesn't matter what the enemie's attack looks and moves like, since the player doesn't need to actually dodge it, they only need to press the dodge buttom at the right time.

And lose the whiff punish opportunity, if you are familiar enough with the attack and hitbox you can just use footwork to dodge it and be able to punish immediately. I-frames are great and a staple of the series.

It's called rollslop for a reason
The problem is that the game began gravitating around the concept of I-framing through attacks moreso than anything else.
Almosy everything else in the game is the illusion of choice and depth. It doesn't matter what the numbers on your character say, besides whether you use the cosmetic katana, hammer, or wizard stick, because the execution is just about the same regardless.
Elden Ring cements this by anything that sticks its toes out of this formula being hideously unbalanced one way or the other. They literally cannot balance a game without rollslop. The only ways to play the game are rollslop or cheese, and the cheese is just bad design.

It's actually an extremely apt comparison.
Pokemon games are comically easy, but kept "difficult" by the players jumping through hoops to create self imposed challenges like Nuzlockes.
The Souls community does the exact same thing, except they throw tantrums whenever they hear about people not playing by the same self-imposed challenge as them, because it exposes them for playing easy games only made difficult by player autism, and the people who obsess over these games are hilariously insecure and NEED people to think they're hardcore gamers.

I don't get what the character is rolling through in the games anymore.

Huge wall of fire with 21 spears that come out from the ground? Roll.
50 meter tall dragon that swipes at you with its arm the size of a Kispe Kreme? Roll though it.
Two moon balls that ignite the entire floor in an astral fire throwing anything it hits upwards? Roll through that.

It genuinely takes me out of the experience when everything is just something you roll through.

This is more a fault of RPG mechanics, specifically levelling.

Is a boss really difficult if it becomes easier the more time you put into a game?
Elden Ring should have forgone all stat levelling and just let the player explore for weapons and armor they could use without stat restrictions.

Games wouldn't be nearly as popular if they did that. Most people like the feeling of progression. There are games the forgo leveling like you say and they aren't nearly as popular because you don't get the dopamine of getting stronger on a regular basis. Most of those games devolve into speed running for the best weapon and the murdering the entire game. Granted you can still do that in a souls game, but there's still the progression of leveling to get the right stats for the gear.

The only one reducing things ITT are the posters. Do you guys remember that shields exist? They have their own unique counters, can absorb spells to create their own projectiles, etc. Elden Ring is less stale in this regard, not more.

Obviously it is profitable to roll sometimes even with shields, but complaining about rolling is like complaining about parrying. It's a profitable option with a risk/reward system.
