120 to be able to press claims in the balkans, 300 to become an empire and 500 to consolidate the empire and accept greek culture and get full cores everywhere.
Also if you're still early in the game I recommend you to go east very quickly, get Aris and Karaman fully gobbled up otherwise they'll join the Eretnid/Ilkhanate and it's a really tough fight early.

Muslims remaining in Iberia isn't the strangest thing. The Castillians only conquered them when they gained a vision of uniting the peninsula due to the marriage and whatever. Before that, they were content with letting them remain and pay tribute. The game should give a CB that lets them conquer it all once they become dominant in the peninsula though. Maybe it can even do the whole "occupation hands location over to you" thing too for locations in Iberia. When they conquer it all, an event should give a chance for them and the North Africans a chance at peace. Something that will be accepted most games by the AI unless Morocco is pretty strong or the Ottomans are involved or whatever.

Giving Byzantium another try, I fended off the numerous civil wars after Andronikos III died, and am slowly working my way out into Anatolia again.
I started with a no-CB war against the Ottomans which basically sealed their fate, and just took a big bite out of the Karasids.
I'm going to spend some time building the economy up now, the textile output of Constantinople looks very fruitful.

Played a few games as Granada before coming to the conclusion that this country is fucked. It's got a lot of problems that basically force you to play ~100 years behind everyone in your neighborhood in terms of potential scaling.

I think it's a major flaw of the game TBQH. One of the fun parts of PDXslop games are playing nations that are underdogs and turning them into decent powers. I'm not saying that, like, Brittany should be able to 1v1 France and somehow turn out to be Better France - but it seems like out-scaling in this game is either literally a 500 year project, or logistically impossible.

In Vicky II for example - if you're willing to have a hell campaign, you can turn Ottomans into a late-game powerhouse by literacymaxxing despite their On-The-Brink-Of-Collapse position at the beginning of the game - and as I think Vicky is the closest PDX has released to this game - you're never going to be GP1 as Mexico, for example, but with good play you can certainly become the dominant Major Power in your area. I feel like in EU5 unless you play one of the Major Powers or someone de-facto scripted to become a Major Power (Ottotan, Muscovy, Vijaynagar) the game itself is designed to prevent you from even being a regional power.

Most of them are trade-offs, but yeah, Centralization is a clear winner. Another one I think that's like that is Individualism vs. Communalism. Free Subjects also seems better than Serfdom to me. Probably Innovative rather than Traditionalist as well. Quality vs. Quantity, Quantity has frontage which seems way better than what Quality has. Traditional Economy is what you want at first but eventually you move over to Capital Economy once your food industry is settled. Offensive and Defensive, I'll always take Offensive. Aristocracy I think you just have to deal with it in early-game because the stuff that gives ticking Aristocracy is really helpful, but eventually it's nice to chip away towards Plutocracy to get rid of the power buff. Then there's stuff like Land vs. Naval where it depends on the holdings of your state. I think Inward is better than Outward. Spiritualist and Humanist, I felt the pain going Humanist and trying to convert people. Humanism also doesn't give you great stuff by itself, it's mostly just a fairly diminished Reform with Innovative. That leaves Belligerent vs. Concillatory and Mercantilism vs. Free Trade which I'm not sure about.

My big issue was my vassals being useless and squatting in Britain instead of helping me. My strategy has been to roam around and rape the French vassals to get enough warscore to peace out with some gains, before the French send a doom stack to rape me. My big success was after I allied with Castile and they helped me occupy the capitals of a few French vassals that are now under me. I don't really want the French throne. It feels like it may prematurely make me too powerful. Who knows though I'm still very early.

Farming villages are a strict positive wherever they're built. The main reason you wouldn't build them is if you plan to urbanize to a town/city in that province or you have more productive investments elsewhere.

How do people play with nations that have slaves? The way pop promotion works makes me feel that slaves arent useful at all.

In my town I have 6000 labor employment slots because my RGO is lvl 6. There are 3k slaves and 3,5k laborers. It will keep promoting peasants to laborers even though every laborer over 3k will do literally nothing. Instead of being promoted to upper strata they will just twiddle their thumbs.

You need to select your army into the province your enemy has a building and click the raid button in the army interface. That gives you 20% war score. It gives you diminishing results, so quick wars are your best bet.
