If you look at the 'Stats for nerds' on the video, it shows you how many dB below their loudness target it is; the compressor dynamically brings it up closer to the target. If in the ASMR there's a loud click/pop or they knock the microphone, you hear the volume temporarily 'dip' and go quiet, then it slowly rises back up to the target again.
