Add special effects, subtitles, etc? Then you need a proper video editor. There isn't much more than that, just start using it, watch Youtube videos about the software that you use, I guess.

Basically, the higher the bitrate, the larger the file size. The lower the bitrate the smaller the file but also the quality of the video decreases. So encoding a video is a balance between how heavy you want your video to be, and with what quality.For example, to post here, you need to have a video that doesn't go beyond 4 MB in size which means you often need to reduce the bitrate and quality a lot, so testing different parameters often gives you the best results for a particular clip. If you want to post to Youtube in general, then you don't have limitation in file size, so you can use different parameters.
