1: attempt to demand/extort through the use of strike action increasingly more pay from your employer on a regular basis, regardless of whether you actually deserve a pay raise or not

2: act like a mafia-style organisation that actively tries to prevent anyone not in the union from being able to work any of the roles the union "protects" in that geographic location; don't think it'd happen? look at most of the major cities in the U.S., where folks just peacefully trying to work for themselves quickly get threatened and abused by the local union/teamster mob with the option of either joining them or paying them off, or risking having some kind of 'accident'

unions just suck, they go on strike to fight 'the man' but all they actually do is actively fuck up the lives of ordinary folks just trying to go about their day in peace, whether it's striking train/bus drivers forcing good people to go through literal hell trying to get to/from work/school/whatever via public transport, or it's doctors/nurses actively putting patients lives at risk by standing on the picket line instead of being in the hospital/clinic doing their job, or firemen going on strike rather than putting out fires and saving lives

Well, it comes from first hand experience as in my country (European) we have the entire metallurgic sector Unionized, they do research on these topics and ask for an adequate and minimum pay for their respective jobs and usually get in agreements with the employer.

In a Socialist economy the means of production would fall into the ownership of the workers/state and they'd use those resources to distribute it across the country as is needed. Government officials (or as you call them, the 1%) might enjoy a lot more benefits due to their position, sure, but they should work in the interest of the people and of course, the hoarding of wealth in a Communist/Socialist state would be impossible, thus making the "1%" in this case non-existant as there's no real hoarding of wealth.

TL;DR the 1% is about the hoarding of wealth and resources, not "RICH PEOPLE EXIST!!!111!"

Unlike most western communists I actually worked a union job once. On one hand I made more then minimum wage for a piss easy job. On the other they took 10% of my paycheck and once I stopped working there they demanded I pay 80 dollars for the jacket they provided me that I never returned. According to my co-workers with more experience this was a particularly good union though. And to be fair I was getting paid 50% over minimum wage to literally stand around and do nothing all day.

Keeping things vague but I'm working at an entity with some unionized sections and a large one that was not. The top boss announced something that would fuck over tons of us, then said in the same speech that this did not apply to the unionized workers. He was actually retarded enough to say that. We went from small steady growth to exponential growth overnight.
The protest we concocted was successful beyond my expectations. The boss was so shook he hired some private security goons to follow him around 24/7. Two of the goons were retarded enough to do some Pinkerton-style illegal activities against a union supporter and not realize she was recording it (single party consent state) at the time. That was given to relevant state and federal authorities + journalists and the boss received some informative letters from lawyers. There are other positive developments, and I've connected with some other fellow commies in the process. We're winning. It feels fantastic.
