Is it even possible to remove metadata in the ffmpeg output file?
I specifically talk about "Encoding settings". I've tried basically everything from official tutorial, hundreds of google results, chatgpt, and nothing worked except bitexact (-map_metadata -1 -fflags +bitexact -flags:v +bitexact -flags:a +bitexact) which is not a great option for obvious reasons.
I dont even mind using bitexact, because the media I convert is so shit quality that nothing will ruin it, but still, is there are proper way to do it?
The "Writing application" line is kinda removable most of the times.

Another question is how to understand and replicate settings from OP image.
Why is it in M4V bitrate mode is constant, however it has maximum bitrate, shouldnt it be, you know, constant? And then in the top section it says "Overall bitrate" is variable. I assume this is because audio is indeed variable?
What string for the ffmpeg will result me exact same settings? Is it just -b:v 8000 -strict -2 or something? I remember it always showing me other bitrate than I wanted in metadata.
