For the past 10 years I've basically been playing nothing but

>Portal 2 (Perpetual Testing Initiative)
>Minecraft
For the past 10 years since I've been about 14 years old. I've rarely ever extended outside of this and the only times that I have, I've usually been disappointed as most games nowadays feel like barely finished messes. All 3 of these games I've listed feel like you could play them for an unlimited amount of time and never get bored. I just wish that there were more games that felt like this. Anyone have recommendations?

do you want to? i've been playing cs source since its launch and to this day i've never touched cs:go/2. if you still having fun it's all good
terraria is pretty good, also has tons of mods. dead cells and other roguelite games is fun as well. both of these games have tons of replayability

Try FEAR for PC. You can techincally squeeze more out of the game if you aim to complete the game in every difficulty. Its a fun game if you are into early 2000s PC horror games. The whole series is on sale on both GOG and Steam.

I don't understand, you want to expand your palate but you still want games to be like the three you've listed there? FPS/Survival/Puzzle/Creative games? If you're happy playing those three games, why stop?

Monster Hunter World is probably the most different in terms of what you play but if you love the gameplay (hunting monster, getting parts, upgrading stuff, hunting bigger monsters) you could get a lot of time out of it: https://www.youtube.com/watch?v=bdih10CbEy8

Roller Coaster Tycoon 2 might be pretty fun for you since it's just about making a park and being creative about it while avoiding losing money that you shut down: https://www.youtube.com/watch?v=UconW9Wz478

Not sure if you'd want some long single player stuff like an RPG or Adventure title (e.g. New Vegas) that aren't really that repayable just good games then just say.
