I am ancient. I stopped following anime in early 2000s, so for me, best titles out there would be

>Berserk

>Possibly Ninja Scroll

Attack on Titan, violent and weird but you learn the secrets of the world the same time the main characters do. Once you complete it and look back on earlier episodes it's easy to tell the author created the entire world and story before he even started writing it, which really helps keep retcons and mistakes to a minimum while all the pieces fall into place.
