A friend gave me his recently factory reset phone to preform some data recovery on. It has FBE, I know that with FBE every file is encrypted and that key is destroyed when the phone is factory reset (correct me if I'm wrong). So images and documents should be unrecoverable, right? But what about other data? What can I recover? Are apps, browser history/caches', etc. recoverable? I don't want to tell him "sucks to be you, nothing can be recovered" but the more I search the more that seems likely.

Return the phone to whoever you stole it from, Jamal.

He just has to input his password and the disk will be unencrypted and he can recover data easy peasy.

It won't be that easy if the phone was recently factory reset.
