Skip gnosticism. If you're interested in its cosmological function then check out neoplatonism which is its core philosophy. The rest of gnosticism is just dualistic fan fiction and is entirely a trap for alt-history types to mill around in berating each other with "lost scriptures". It's basically American Christian evangelism for conspiritards.

Hermeticisms core texts:
Asclepius
Corpus Hermeticum
Kore Kosmou
Conversations in the House of Life

^ the above texts read like any other religious literature. You will not understand it on the first read and it takes spiritual practice and repeated exposure to really begin to grasp its depth.

Technical Hermetica (using hermeticism for magic/alchemy):

Book of the Keys of the Work - Zosimos
Liber Hermetis
Greek Magical Papyri
Picatrix
Carmen Astrologicum

^ these texts deal with the hermetic arts which are astrology, alchemy, and magic. Hermeticism has a core philosophy and theology and surrounding it is the technical hermetica which is how to practically apply that theology and philosophy.

There is a lot of cross over in some of the philosophical components (such as emanation and demiurgy) between hermeticism and neoplatonism, and gnosticism built its theology using neoplatonism as the foundational principles.
