In Enoch 3, Enoch ascends and become Metatron, the highest of all angels, who proceeds to have throne next to Gods, and is even nicknamed "little Yahweh" by God. Considering Jesus is also thought to have some sort of preexistence before his birth, would it not be possible that Jesus is an incarnation of Metatron? There seems to already be the dynamic of father and son between God and Metatron. Is there anyone who has written about this before?

No. its more likely that Jesus was in the garden of Eden with Adam and Eve. Jesus acts as the physical manifestation of God the Father.
