Why was it so common for manga and anime in the 70s-90s to go on and on about how 'humans are the real monsters' and have plots where the earth rises up and destroys humanity? Japanese writers now don't seem to care about that shit at all, but it was their big thing 40 years ago.

Because the Club of Rome founded in 1968 was churning out reports of Apocalypse based on thin hair about how human growth population would destroy the earth and that population control was necessary. That scary narrative found its way in media as books, movies and of course manga, as it's an easy plot to use. Same reason why there were stories about a global cooling who would have supposedly transformed earth into an ice ball or today with global warming turning the planet into a heat ball.
