Because eventually, like all fads, they die down. Plus, they weren't selling enough toys.
And pic related; Cowboy Bebop was a freak accident because Bandai/Sunrise gave the keys over to Shinichio Watanabe and told him to make a cartoon that can sell spaceships without supervision. Basically went about making his own shit until Bandai saw what he was doing during produciton and practically pulled the plug on funding until they were saved at the last minute by sister company Bandai Visual. And then you had Yoko Kanno who made music that was so fucking good that the animators completely redid entire sections of animation to match the quality of the music. But outside of that, most animes can't compare with it. Outlaw Star is...semi-average. I think a lot of people just remember it fondly due to airings on Toonami 24 or so years ago without actually rewatching it. Personally I don't think it holds up or should be put in the same echelons as Cowboy Bebop or even Trigun.

It has, multiple times. Right now, we're in the endgame for isekai, with most of the adaptations becoming hybrids with slice of life shit, instant-overpowered MCs, slow life, self-aware parodies, and fantasy (both "it's literally dragon quest" and otherwise) stories that just slap a bit of "errr the MC is from another world and just got sent here offscreen, he's a native now" at the start to get the isekai tag while it is popular.

It'll die out soon enough, and it remains to be seen what comes after. Doubtful it'll be much good, since we're not likely to get anything like the Mushi-Uta-likes of the late 00s coming back.
