I'm looking into building an NAS (will probably just have one HDD and a backup one at first, but even with that I'm planning on getting either 12 TB or 18 TB drives, which is several times the total storage I currently have) since I've already been using the comparatively small storage of my desktop to keep stuff on while I typically use my laptop.

Depends on the machine. My offline NAS is 12TB for media two drives of which are dedicated to anime. It's half full maybe however it's all x265 encoded stuff. My HTPC has a 4TB drive and has some anime but a lot of live action stuff too.
