I'm having Indian filter coffee right now, iced. The missus is Indian and she introduced me to this stuff. I like it. Very l, very strong coffee that you milk heavily and enjoy hot or iced and if you have it hot, you tumble it between glasses to make it foamy.

>anything profound
no i wouldn't say so
>interesting
sure BUT it is very much a liberal publication
im a couple issues behind and the quality can vary alot
you can get an issue for "free" to try it out, i think at the moment its issue 33, which i have in my lounge.
i can go get it tomorrow(its currently 2am) and read through it to tell you if i find anything interesting.
but the quality of everything other than the literature is always very good.
i feel like $80(?) a year is worth it.
also there is free coffee from roasters you might not usually have access to.
this issue came with a fantastic light roast colombian.
about 56g worth.

issue 33 seems to have an interview with Douglas Weber from Weber Workshops
i should give that a read actually...

also unfortunately the mag also has full page advertisements throughout the book
not too many and they dont usually feel invasive.
also they are all coffee ads so at least it might actually be something you would want to buy.
but for a premium mag i would prefer that it is ad free.
i mean id prefer they make it $100 per year and remove the ads.
but overall i dont think its a deal breaker.

not that i remember but i wouldn't take that as fact.
from what i do remember about the articles in the issues that i have read there seems to be a focus on the farmers/growers of the coffee and a bit less on the roasters.
>consumer-end stuff like brewing toys a la Weber?
from memory i would say that that is the audience that they speak to.
i have about 6 or 7 issues so if you are curious about something specific again i can check it out tomorrow

That's actually an espresso. The cuppa is 7cl to the brim, and there is 4cl in the cup, but the expresso bar (torrefacto blend) is so gassy that i pulled the shot to the brim, you can see the crema has deflated a bit. My preferred way of drinking caffeinated goff is espresso, no sugar, no milk, sometimes i go for the ristretto, but that's what i mainly drink.
The cappuccino pics are made with a decaff arabica/robusta blend to hone my drawing skills later in the day as i otherwise would never get to practice. I would otherwise drink the decaff as a café crème.

Man PNG landscape looks mint. Your goff description also. I looked in my notes and had a PNG goff but espresso roast oriented, with a nice acidity to it. I will try to make a pour over this weekend with the decaff to keep things interesting.
>high-extraction
Does that mean you agitated the pour over?
Enjoy the goff.

>but the expresso bar (torrefacto blend) is so gassy
what is an expresso bar? did you mean espresso bar? is it just a fun way to spell things wrong? i dont have a machine yet, the closest i get is my moka pot. what kind of machine do you have, anyway?
gotta appreciate how decaf lets us practice/experiment late into the day without ruining our sleep (:
yeah i wanna visit PNG or really any country in the coffee belt some day
so far ive really enjoyed every coffee ive had from PNG, its exceptional stuff
by high-extraction, i was referring both to the relatively high ratio of water to coffee, as well as the technique. i used a pretty turbulent, aggressive pour (for the main pour, anyway) and stirred the shit out of it after both the bloom and the main pour. that combined with the thin papers and fine grind made a pretty strong, tasty cuppa. works really well for high quality washed coffees, too. i dont have a refractometer (yet) but id be willing to bet that it wouldve measured high in TDS. (:
super psyched to drink goff tomorrow! will probably try the Tanzanian dry i roasted a couple days ago (:

cup of very light roast colombian(im not into it but coffee is coffee)
and a stack of standart issues next to me :)
i have issues: 28, 29, 30, 31, 32, 33, 35(where the fuck is my issue 34)
>>
>>20608997
>(where the fuck is my issue 34)
i found it :)
>>
>>20609020
also im retarded
its 26 not 28
pre issue 31 things are not really nailed down in terms of size or layout
26 and 29 are larger than 30+
and they have a mono or multi color frame and then an image inside of that
which changes to a smaller frame on issue 30 with the inner photo have soft edges
this is quickly changed in issue 31 onwards where it feels like that finally understand how the mag should look
so if you are looking for something that looks better on a coffee table or on a bookshelf issue 31 onwards is the way to go
(these are just skimming through and giving what i think are the highlights not the entire contents of the issue)

issue 26
very liberal(white man bad)
article on burundi
nothing on roasting

issue 28
morgan eckroth feature
turbo shot
democratic republic of congo
can specialty coffee both taste good and do good
talking about why traditional italian coffee is so bad
nothing on roasting and seems focused on women(cover has 2 women sipping from the same cup)

issue 30
love the cover of this one, it is also the only one with an debossed frame around the photo on the cover.
it had a 10% discount code for loveramics
taiwan from shakey ground to local champions
proud mary interview
wdt
talking about how many coffee species there are and the impact of climate change
meet a 4th generation colombian specialty coffee grower
old espresso machines vs new
how greater dissemination of information does not mean greater learning
no roasting and it came with some stickers i havent used

issue 31
new era of standart
fantastic cover photo
mozambique
long form essay on shelf life of specialty coffee
zero bypass
douglas weber talks about coffee tools and his design ethos
2(TWO) lance hendrick articles
in search of the best coffee shops in las vegas
no roasting, this issue feels much more text dense than the previous issues

ROASTING ARTICLE ABOUT THE CRACK and how new machines change the sound of the roasting room
fermentation craze over or just the beginning
dialing in espresso
the history of coffee in traditionally tea-soaked china

cute cat coffee stickers inside the first page
australia is known for its coffee culture but what about its production
traditional coffee diner in sydney's inner suburbs
meet uk roaster from brighton micah sherer
to what extent does coffee and whine match
has the industry solved the problem with terrible filter baskets

Shitposting aside, i have a temp stable 58mm made in italy shiny metal machine. Gearfaggotry bores me, not that there is anything wrong with it, it's not for me though. I much rather talk about the coffee beans themselves.
This vid, where the coffee is yolo roasted on a cancerous pan over a fire in a room, without fumes ventilation then "grinded" with a stick and immediatly brewed in a suspicious healthwise vessel resonates with me. https://www.youtube.com/watch?v=ecnC_XLeajE

It's a custom that comes from the end of the 19th century. Some french maître chocolatier started to serve them with italian espresso and it stuck. The small choco pieces are even called Napolitan.

>It's no secret that coffee and chocolate go very well together. Tasted together, they can even enhance each other's special flavours. That's why restaurants often serve a piece of chocolate with their coffee.
>There are many similarities between coffee beans and cocoa beans. For example, they share many of the same aromas. Roasting is an essential stage in the production of coffee beans, as it develops their aromas. Naturally, the region of production, the nature of the soil and the climatic conditions have an influence on the subsequent taste of the products.
>However, not all chocolates go equally well with all coffees. Because only identical aromas reinforce each other, completing the taste of the coffee consumed and the chocolate that accompanies it.

Keep in mind that it's mostly for traditional short and strong coffees, i don't think it's a great association with light roasted coffees or filter coffees.
The Valrhona i kept it from the last coffee shop, it's 61%, but usually they're small squares served with your cuppa, lookup napolitan chocolate.
I find it really tasty.

The Kurasu beans arrived just in time. Trying the dark roast first because I haven't had dark in so long I barely even remember the taste. It's really nice, it's refreshing to change it up. The other two are medium blends which I think over all will be much more enjoyable. Dark roast on a winters morning is truly not so bad as I expected.

Surely it can't be that hard. I saw a really cute coffee store (filters, drippers etc) in Japantown. Didn't get to go in though, thankfully I was only in San Francisco briefly. Can't you just wander around (avoiding being mugged or stepping in human shit) and find something that looks interesting?

The truth is that most of Comandante's IP is invalid, they can't prove that they own the cylindrical shape and, then, they base their claim just in the angled handle. KINGrinder just changed the handle in Europe and in the rest of the world they keep the angled handle because Comandante can't enforce it outside of Europe.

IZpresso just "invented" the "foldable handle" to void Comandante's claim and maintain the same angle.

Is my filter deformed or something?

Whenever I knock my portafilter to get the grounds out, and I'm using the double shot filter, the full filter just pops out. It doesn't seem to grab as firmly as the others. For the single shot, I basically have to pry it off if I want to change it. Is there anything I can tweak to make it tighter or something? Has anyone had this happen?

Why does Starbucks coffee taste so bad? I mean, I assume they have the best grinders, pro espresso machines, and a plentiful supply of coffee beans?

>roast the hell out of it because
>tasted burnt
Its a numbers game .They roast that dark for consistency on their cheap low grade beans. Starbucks can't serve top tier specialty at all of their 17k locations and keep the experience consistent. One, there's not enough of any specific crop to feed that consumerism. Two, when 99% of your customers are flooding their coffee with milk, sugar, whipped cheap, and 8 flavor pumps you want something acrid enough to cut through the slop and still taste vaguely like "coffee". Tastes like shit, but it'll taste like familiar shit no matter where you are.

New bins broskis. Washed volcanic sweet and suave red caturra micro-lot from Pampojila.

>SENSORY PROFILE
>Notes of chocolate, lemon, sugar cane and hazelnut.
>This coffee is produced in the Pampojila farm, a plantation located in the Solola region, in the department of Santa Barbara. Located not far from the Atitlan volcano, the farm benefits from rich volcanic soil, a considerable asset for the cultivation of its coffee trees. These are all produced in accordance with a responsible, sustainable and socially viable production method.
>The liveliness of this coffee is reminiscent of the coffees of Huehuetenango.

>PAMPOJILA
>It was following the Agatha storm of 2012 that producer Alex Herrera bought the Pampojila farm, whose production tools had been completely devastated. After restoring it and by dint of determination, he succeeded in relaunching production and, thus, giving work to a hundred families. The discovery of coffee production on a farm like this (500 hectares of volcanic land at an altitude of between 1250 and 1500m, a processing plant, etc.) completely changed his perception of coffee: Alex then discovered a real local product. This is why he is fully involved in the renovation and development of the farm, first by replanting coffee trees, then by renovating the processing plant. Today, 250 hectares of Caturra coffee trees are planted between 1470 and 1720m; the remaining 250 hectares serve as a nature reserve.

>THE STRONG POINTS
>Polyculture planting | Territory of the Atitlan volcano | Sustainable production | Nature reserve | Vivid coffee profile of Huehuetenango

>THE PRODUCER'S STORY
>Alex Herrera is the owner of Finca Pampojila and Finca Panamá farms. The plantations are located around the Atitlán volcano, in the Sololá region, in the department of Santa Bárbara. Alex Herrera owns a very special polyculture plantation. In addition to producing coffee for more than 100 years, it also has various agricultural productions, including a large production of macadamia nuts, honey, rubber and quinine (known in particular as a remedy for malaria). Its objective has always been to produce while respecting a responsible, sustainable and socially viable production method.

Tasty coffee. Has a discernible chocolate taste on the first sip and some sweet lemon like acidity appears once you swallow. Overall balanced sweet sip, with a faint lingering aftertaste. I like it more than the last three other guatemalans i tried.

well i think it can void the warranty
manufacturers include a brush or recommend using a brush to clean
but the c2 has stainless steel burrs so i suppose you can wash JUST the burr and then make sure its 100% dry before reassembling
but from what i have seen everyone just uses a brush and that seems to do a good enough job

Wouldn't that work?

Um, what the hell kind of brewing technique are you using?
>>
>>20631321
the one where you choke on your food and almost die and have to bang on the door of your neighbor to help you before you suffocate to death kind of brew
>>
>>20631421
Holy shit, I'm glad you're okay
>>
>>20631435
thanks
it was very very scary
i have been inches away from being hit by a bus or car before when crossing the road but never have i felt so close to actual, real death as i was last night
they didnt open the door for what felt like forever just asking "do you need an ambulance?", and im thinking BITCH IM FUCKING DYING HERE
but as i dropped to my knees i was able to croak out a "help me" and the husband opened the door and help me out, and then i proceeded to vomit all over their doorstep
they gave me some water, and man, that sip was probably the greatest water has ever tasted
maybe even the best thing i have ever tasted
realising that i could breathe and swallow and i was going to be ok was indescribable

its weird thinking that if they weren't home or couldn't hear me knocking, i dont know if i would have had the strength or time to reach the next neighbor.
and that would have been it.

Luckily adding "le" in front of "cube" doesn't sound silly nor pretentious in french , but no i didn't call it the cube, i called it the nespresso machine. I saw it was called Le Cube when searching info on it before posting. A tank that keeps going btw.
Guatemalan is on point for now, i really like it.
Peruvian sounds really nice too. What's your preferred brewing method?

I just bought ground coffee after a long time, I have been drinking instant instead.
The question is, for pour over, is 18 grams the recommended amount for a cup of coffee?
I feel like it is a bit too much. I can perceptibly feel the caffeine in my brain.

>The question is, for pour over, is 18 grams the recommended amount for a cup of coffee?
depends on how much water youre using
i like to use 15g, usually at a ratio of 1:18 of coffee to water
if youre just getting started i would try 1:16
you might find that an even lower ratio gets better results from your preground coffee, its something to play around with
just take notes
>I feel like it is a bit too much. I can perceptibly feel the caffeine in my brain.
caffeine is a helluva drug
>>
>>20631690
Thanks
I used to make coffee by “feel” a long time ago but now I decided to actually measure things.
I’m going to polish my technique with this random pre-ground coffee and next time buy a grinder and whole beans.

A japanese made dollar store one, and random costco coffee filters.
It just works.
I also got a french press and a moka pot somewhere.
The french press is a hassle to clean and the moka pot always gives me mixed results.
The pourover is is just so much easier to clean and use.

it's sensible but i don't have to be happy about it. one would expect career cobbie aficionados from ingerland and the pacific northwest to have more appreciation for the grey wet sky + dark cup combo. perhaps i'm sour grapes'ing about not having great fondness for most lights

I can appreciate that. I enjoy dark roasts. They used to be hip in the US. That's mostly what Peet's and Starbucks were selling in the 70's and 80's to their counterculture-adjacent customers in Berkeley and Seattle. But apparently it's not hip anymore.

It feels like every time I stupidly try dark roast from one of the roasts I buy from I get the same impression.

oh my lord
this full city plus roast i did of my sumatran anaerobic dry process, 20 clicks on my K6 and brewed at a low heat on a small burner for slow extraction, has got to be some of (if not THE) best moka pot coffee ive ever made
its bittersweet and fruity and slightly tobacco-y and not a hint of sour (possibly more technique related than anything but still)
i gotta try some more anaerobic beans, these ones in particular are incredible at every roast level ive tried
