What do you do with all the leftover oil? This is why I've never deep fried anything, I don't want to use half a gallon of oil to make a couple meals and then toss it down the trash (my landlord's kitchen drain). Can you reuse frying oil? Do I just strain it and freeze afterward?

>>21114856Yes, you can reuse frying oil. You can clarify it using the cornstarch batter trick then just strain twice, once through a sieve and again through a coffee filter. No need to freeze. We have one pan dedicated to deep frying so after straining, they oil goes right back in there with a lid.
