Count calories, all of them.
Eat about 500-1000 less calories than your TDEE.
Buy scales, be accurate.
Learn to cook. Try to stick to lean protein and green vegetables.
Eat a lot of protein. 0.72g per pound of goal lean body mass.
Doing cardio, even just walking, will improve your health. There is no such thing as a healthy diseased heart, but you can offset the risks.
Lifting weights will keep and gain muscle mass and lose fat much quicker. No lifting results in the body eating away muscle AND fat.
Drink more water.

That sounds doable, but I've seen some estimates that suggest 1g of protein per lb of goal weight. My current tracker suggests 201g of protein per day (I'm 230 right now) and that would be 800 calories per day of pure protein alone on a 1600 calorie diet.

Why would you use your goal weight for the calculation? In any case don't worry about it too much, try to get 120-150 grams in and call it a day. Even assuming you're weight training that should be plenty to preserve what muscle you have.

I drink socially every two-three weeks, though.
I generally don't count calories on these days, nor do I try to "compensate" for them - I just accept the L and move on. I do tend to skip all the food before the event, if I'm aware it's coming though.

The US culture of, as the French would say, eating with a slingshot is harmful and a likely contributor to the country's overall diseating.
There are studies showing chewing your food longer increases feelings of satiety (https://pubmed.ncbi.nlm.nih.gov/26188140/ and such), while we have plenty of evidence that eating ultra-processed slop which is essentially predigested food that barely needs any chewing will instead keep you hungry.
This is why I only eat carbs that come from whole fruits and vegetables, as their high fiber content and necessary chewing balance their carb loads.
Now the ideal way to eat is not just to eat slowly, but in pleasant company as well. But that's harder.

I started by obsessing about my "lifestyle change", because "diet" sounded too trivial. I researched everything. Nutrition, vitamins, supplements, exercise, metabolism. I became an expert in.. well, in nothing, obviously. You don't become an expert by reading 3 articles and watching 4 youtube videos.
But I felt like I had a *handle* on things, you know? Like I had a plan. I had confidence on my side. Over-confidence, probably, but I wasn't going to let myself get bogged down in such details.
So naturally I started tracking my food, activities and sleep just as obsessively. I bought a fitness tracker I slapped on my body. I logged everything I put in my mouth. I had charts. My charts had charts. It was beautiful, anon.
With hindsight, it was perhaps slightly overkill, but it certainly allowed me to track what worked and what didn't, how well my intended calorie deficit aligned with my weight loss, the impact of exercise as well, etc.
Nowadays, a few months later, I've relaxed a bit, but the foundations I laid down when I started are still there, and I still track everything fairly well.
This is probably not a good approach for everyone, but if you see your wellness as a technical problem to be solved analytically, this might be for you.

Rows, lateral raises, bench and a bunch of other exercises are just as effective with dumbbells. If you have an adjustable bench and dumbbells that go up to 90lbs each you'll be able to make very good upper body gains for at least a year. Posterior chain and legs are a different story.

Drank alcohol for the first time this year last night at a party... drank about 600 calories of rum and wine. Today I was hungover and felt like shit and ate 400 calories over my target.

I tried to preemptively combat this by going on a big hike and submitting a mountain, ending the day I partied before the drinks on a 1500 deficit. It probably influenced me to eat more today now that I think about it.

Using it, my fitness tracker was telling me that I was hitting zone 5 walking around the neighborhood, which seemed highly doubtful.
So I bumped up my max heart rate by 15 bpm, and now the zones I hit are at least plausible.
If you google around, they'll tell you to run uphill a few times and see what your heart rate can reach as a mean to measure your actual max heart rate, but that sounds like a lot of work.
Still, assuming your watch works, you've got a new lower bound for your max heart rate now.

After 4 months, I've started to slack when it comes to diet. I still have a rough idea of how many calories I'm taking in, but I'm not being as strict with what I eat. I'll eat pizza with friends, drink a Pepsi at dinner, eat a small piece of chocolate, etc. when I was far more choosy with what I ate before. Come in right on 2000cals but need to work on meal timing, just hard when working 12hrs a day, plus 30min each way commutes. I've done a 500 a day deficit for like 9 month in a row and it was relatively pain free. The downside is it took people like 6 month before they asked if I'm losing weight (and im not that big to start with) but it was pretty easy and I didnt feel like caving very often.

I'm now at 1000 calorie a day deficit and the cravings are harder and Im finding it way harder to motivate myself to do stuff. My body is resisting by making me lazy. I've only been doing the 1k calorie a day deficit for 2 week and I doubt I will keep it going for longer than another 3 week.

You can always step down to 500 calorie a day deficit including exercise to give yourself some respite. It's still progress. Remember the goal here is to never cave and instill a permanent lifestyle change and rather than going until you break at a massive deficit why not step down to 1lb a week weight loss for a month.
