The only thing you'd have to do post-install to make it like Mint is uninstalling snapd and installing flatpak. And the benefit of going with Ubuntu over Mint is that you're not locked into using an LTS release. You can (and should) install 25.04 and get all your driver updates and system updates much faster. As in, every 6 months instead of every 2 years.
