All forms of disk encryption greatly slow down your I/O speed. If you have a NVMe SSD then it will cut it down to SATA SSD speeds. So basically I doubt it's worth it to enable disk encryption. Google's proprietary services are a massive threat towards privacy, because it's their business model. Security is top notch and the way apps are distributed through the play store is very secure. GrapheneOS never claims otherwise. It's on you to give apps certain permissions in the profiles you feel comfortable with. You are not required to install anything from google or use any app that has Google libraries built-in.
