It's nice that things just work and you can compartmentalize what Google gets about you. Apple is a PRISM partner too, but seem serious about privacy with E2E iCloud and stuff, refusing to push unlock exploits to terrorist phones, etc. I don't fully trust them obviously.

Coming from GrapheneOS and /e/OS on a Pixel it's nice that things just work. Paying with your phone is underrated, something you can't do on custom Android ROMs.

I still use Gmail and Google Photos but at least Google now only knows my location when I use Google Maps.

You are describing a Sony phone except $400 might not be enough to afford one, maybe an old 10 series from Swappa or something I can't find much online. Yes it has a slow storage expansion bay and you can keep using your 3.5mm white Apple earphones you got with your iPod back in the day. The 10 V is an endurance marvel, with a large battery and lower end chipset. It will last, but it will not be fast.

This is peak S23 battery life. It's really not getting any better than this. 86% in 8h15m SoT.
All day battery saver turned on, and even airplane mode during those 46 minutes (2 anime episodes) of VLC on the train. Half 4G mobile data, half WiFi 6. Didn't play any of my Gacha games before midnight.
This screenshot should be shown to new S23 buyers to see a best case scenario for battery longevity during a single day. Realistically on most days I only use about 2.5-3h of SoT and that combined with idle drain comes to around 40-50% battery drain per day, or a charge every day if I'm doing 20 to 80 like recommended.

It is really impressive for the battery capacity, but still other phones can hit similar numbers without using battery saver all day. Especially those new phones with the Si/C battery and 6000 mAh+ capacity, compared to this phone's small 3900 mAh Li-Ion battery.
In an ideal world phones can easily reach 10h SoT + 30ish hours idle, so they can either last one very heavy day (5G, maps navigation, music streaming, Bluetooth smart watch, high brightness, all at the same time for hours) or two average days of 4-5h SoT, all on the same charge.

Motorola has the best looking phones hands down but they are weird on two fronts:

It's all about priorities. If your biggest concern is a powerful processor it just doesn't make much sense to go too much above poco f6 right now unless you are willing to spend a lot more for a lot less in comparison.
The experience on low end to midrange phones is almost indistinguishable at this point. You are just paying a huge premium for some gimmicky features and more long term upgrades which probably won't even matter since you would have replaced your phone by then anyways.
But yeah there is no reason to get something as old as a poco f3. That is indeed just skimping and although even an f2 is still a decent phone today, I still wouldn't go for it.

I'm switching from my HTC U11 which still works fine, only the camera doesn't want to turn on anymore. I love the features this one has, and seemingly no other phones have stuff like it anymore.

I read around. Even on plebbit. It's always the same, some ppl say it's a good upgrade, others blaming snoy for cheaping out, yada yada.
I came here for a second (thrid) opinion.

The problem people have with the Xperia 5 is that it's just not comfortable to use/hold.
The long form factor just makes texting suck because it's so top heavy.
I bought the Xperia 5 I and Xperia 5 IV but sold them because they are less comfortable to use than my XZ1 Compact.
Sony was fucking stupid for going with the 21:9 aspect ratio.
