I plan to buy a 2WD Ural and from what I've read so far it seems that the year range 2008-2014 is the most ideal.
Urals produced after 2014 are too modern, complicated, and expensive to repair, and Urals produced before 2008 are too shoddily made and sourcing parts for them is hard. Also everything has deteriorated due to age, even if it's not apparent.
That said, I can get a Ural from the 80s or the 90s for 1/3 of the price of a Ural made in the year bracket I mentioned, and that's really tempting. So, y'know, I just wanted to understand whether it was really worth paying triple the price to get a semi-recent Ural.

750 Urals with Keihin carbs are good bikes, from 2014 onwards they're fuel injected, but the engine itself is the same 750cc as on the Keihin carbed ones, there's nothing "more complicated" in them. Parts for the carbed ones are just as expensive as the FI ones.
If you're a complete wrenchlet then I wouldn't recommend one, but it's also a good place to learn.
My biggest issue with the newer ones is that getting certain parts for it can be difficult. Crankshafts for 750 OHV engines for example are almost all under a rock and if you do manage to find one, good luck as it might cost over a grand.

The older 650 Urals on the other hand are abysmal shit, that's why they cost jack shit. Getting parts for 650s is much easier, but crankshafts for them for example are all gone now too as they stopped making them in was it 2001 and whatever was left was it. Chinks make crankshafts for them, but the quality is so bad that even I refused to work it into my bike.
The issue with the 650 crankshafts is that they're a pressed in unit made from like 5 pieces held together solely by friction, they twist out of alignment extremely easily and have weak construction, so they shatter really easily too.
If you want an older Ural, I'd recommend either an older Dnepr or an M72/K750 sidevalve bike.
650 Urals also had really spotty electronics, the G424 alternators were very weak and would overheat if you drove with the lights on during the day.

Very early 750 OHV engines were a bit iffy due to the fall of the USSR, I wouldn't recommend bothering with ones made between 96 and 07 to be honest.
Early ones still had Pekar K68 carbs and 14.3771 500W alternators that were really horrible shit due to their poor construction.
Around 2006 or so they ditched their own alternator for nippon denso units and the Pekars for Keihin carbs. Keihins had an issue of running a bit too lean and causing overheating, so rejetting should be considered.

Also you can convert fuel injected 750s to carbs really easily because the Russians didn't bother redesigning the heads , they just stuck a fuel injection throttle body on a flange and called it a day.
You can just unbolt that shit and stick a Pekar K68 from any Ural and it'll work right out of the box.
650s are fine themselves, but they do have their fair share of issues.
If you're looking for a forever bike then a 650 is fine, but if you're looking for a forever bike that'll also your daily driver then I'd avoid them.

For 750s I think there were like 3 different crankshaft revisions, with the 2015 and onwards "D10" models being the most sought after.

Also Urals don't like lugging the engine at all, that is one of the things that will easily twist the crankshaft for some reason. They also don't like to have the piss revved out of them, that will cause the pistons to explode. Pic very related.
Urals are slow bikes to begin with, like the recommended maximum speed is 45 to 50mph without grenading the engine, 750 OHVs can do about 60 to 65mph, but they almost always have a basket on their side which slows them down.
These bikes are not meant for modern highway speeds or even road speeds as they were intended originally to chug along at 60kmh max.
Also do note that the Ural in your pic has a leading link front fork, it has a swingarm instead of regular telescopic shocks and those are really sketchy without the sidecar. If you want to ride your bike with the basket off, look for an Ural with regular telescopic shocks.

I'm still dreaming that M61 Ural with a 750 OHV engine and cop differential, maybe soon.

Most bikes, from what I've seen, have the chain on the left. I don't think I've ever seen a bike with a single sided swingarm on the right either. For shaft drive bikes it does actually make a difference because the torque at the front end of the shaft causes the swingarm to be forced up or down, preferably you want this to be down. Well the naturally occurring fuel is a finite resource and even if it doesn't run out by then as it depletes the price will go up and eventually it just won't make sense to build bikes that are too expensive to actually use. There are synthetic fuels but again they're expensive, the price could come down but it's doubtful it will be soon enough to be a viable alternative. And finally there's the whole protecting the environment thing, you might not care about it, whether I care about it is also irrelevant, but a whole lot of people do and governments all over the world are investing a whole shit load of money into it.

Why not just looking at places offering the course? If I remember rightly the last time I did it it was around £170, it's supposed to take something like 8 hours but if you're good enough you can be done in maybe half that, if you're dogshit then they could ask you to come back the next day.

It annoys me how regular motorcycles with the engine front to back or barely contained under the fenders in the case of 4 bangers are all so thin. They have a great side profile in case of V2 cruisers, but they look so scrawny from the back.
