Melee weapons work well against chaos because they harken back to the first violence each species engaged in. Certain colours may need more coats than this, namely yellows, whites, orange, purple, or doing light tones over dark tones/dark tones over light tones tend to have worse coverage and are more translucent so it takes more coats to build up a solid even colour

Gloss coating before wash helps an enormous amount with coffeestaining and I personally thin every wash I do with something, whether it be lahmian, speed paints, contrast, varnish. Anything to dilute them back will help make any minor coffeestaining less problematic so you can be lazier and more heavy handed in your application
