They are messy, tricky and with flawed people at the centre of them, and the ones that work are the ones where the two people can figure their shit out. For me, the balcony confession scene is exactly that - Nick and Judy figuring their shit out, just without the "I Love you" (although I do think Judy calling Nick her Fluffle and Nick's reaction need strong examination here). They both acknowledge they have problems (Nick's emotional wall, Judy's hero complex) and the first step to fixing a problem is admitting you have a problem in the first place.People want Nick and Judy to succeed because they see parts of themselves in them and 90% of people dream of finding their Fluffle.
