In the Original Trilogy, Han Solo, and Imperial Officer Conan Antonio Motti are both skeptical of the effectiveness and even existence of the Force. How can this be? The prequels tell us that the Empire was founded in 19 BBY. Motti died in BBY, a middle-aged man. He was at least in his teenage years during the Jedi Purge. Han Solo was born in 29 BBY according to Wookiepedia. He would have been 10 when the Jedi Purge happened. That's young for sure, but not young enough to forget everything, and the Jedi were known around the galaxy, to the point where Watto, a junk trader on an outskirt planet, instantly recognizes an obscure Jedi technique when 0bi-Wan performs it on him.

The Clone Wars gives us whole planets like Dathomir. Surely Imperial planers must have known about the Force-Sensitivity of its residents.

The prequels aside, new material tells us that the Empire had many Hands and Inquisitors, clearly Force Sensitive agents at the Emperor's service, that Motti would have heard of, and people like Han may have heard rumors of.

So how can the Force and Jedi be widely forgotten less than a generation after the Jedi order was destroyed?

simple answer is Lucas didn't really think that hard with the prequels so what would be obvious things to avoid such as making them take place fairly early to the og, or even having the jedi be not only extremely well known but an intergral part of the republic was just over looked

For Motti it was less that he didn't believe in it and more that he just looked down upon it and didn't take it seriously. That scene was just for the audiences first practical use of the Force by the villain anyway.

Motti hasn't forgotten it, though. He's familiar with the concept of the Force. What he's saying is that he thinks it's bullshit, and he holds that opinion because he's never seen or experienced anything of the Force first-hand. It's not hard to believe that some individuals without a first-hand experience would be sceptical about it, even if they've heard from their been told or have read history holocrons about the Jedi. Han Solo had also heard of the Force before meeting Luke.

That Conan Antonio thing is NOT canon. It's not hard canon. It was just some off-the-cuff remark George Lucas made on the Conan O Brien show, and some gigachuds said, "Oh, it's the word of God, it's canon!!!" NO IT ISN'T, WHITE BOY. AND YES, I HAVE BEEN SEETHING ABOUT IT FOR OVER A DECADE.

Several characters say "may the Force be with you" in A New Hope. If anything they know TOO much about the Force. Han Solo has clearly heard of the concept before but is sceptical about it controlling his destiny nevertheless he eventually says "may the Force be with you" in the movie too. Motti is comparing Vader's powers to the power of a planet destroying battle station he is not skeptical of it's existence. Leia knows all about the Jedi and the Force. Young Luke is the only one who has never even heard about it but he does not question the words "Jedi Knight".
