The jedi perform all kinds of tasks in the galaxy they don't sit idle on their asses waiting to kill siths. They learn by sparring with each other and they use their lightsaber to fight, deflect blasters and as some sort of multitool to open doors and stuff, and even as a flashlight in this very show.
