The Manderlys in the North have knights, however most northern houses have northern lords/wealthy landowners on horse. Knighthood is a faith of the 7 religious ceremony. While some Northern lords have become knights like Jorah Mormont or Rodrik Cassel they usually get that accolade after combat in the South. It's not a large-scale institution in the North

I prefer houses not having a sort of "uniform" the way the shows have liked to portray them. There should be certain local armor styles which are more apparent in certain regions than others, while they display their heraldry via tabards, cloaks, or whatever if you want to do something unique for certain houses.
But anyone outside of house guards having these sort of "uniforms" just really doesn't look right.
That being said there's nothing wrong with these designs, I just wouldn't want ALL Bolton troops to look like that, if that makes sense.

However for world building sake I'm ok with Lannisters having same uniform considering they have the wealth to do it. Lore for that one Telltale game had to invent two new minor houses in the North, the Forresters who are like Stark-lite and vassals to the Glovers, and the Whitehills who are vassals to the Boltons. The Whitehills (who contest some of the Ironwood forest that the Forresters own) are now also followers of the Faith of the Seven. Though a neat note, they would bear the Whitehill heraldry rather than Bolton heraldry.
Neat to point out though that this is another potential source for knights in the North now.

There are a billion pop culture depictions of them, but from a cursory search it was a generic tourney-style decoration which was depicted in manuscripts, which then got used as inspiration in some cheesy 1938 Soviet movie about the Teutonic Order, which for some reason became the standard way to depict the Teutonic order with winged and horned greathelms. The popular depiction of them with the decorations made me assume it was real, but I guess not unfortunately.

Generally yes, but there are a few sore spots. The Kingsguard armor from GoT s1 is way better than what we got in HotD. While I would have preferred some actual pristine white enameled plate, if I had to choose between the two GoT wins by a landslide. But assuming they modified the original sets into the ugly late-season sets, that would explain why it had to change.
I also hate the Goldcloak outfits, they look really cheap and plasticy. The original Goldcloak armor while not being true to the source canon, actually did an amazing job of giving them a foreign/eastern/byzantine appearance, which fits perfectly with the whole Targaryen and especially early Targaryen style.

possibly so, Hussar style cavalry was greatly influenced as by the Turkic and tatar cavalry faced around the time of ottoman expansion. Though it really was a practical design too once gunpowder and pikes warfare favored lighter armor and more mobility.

Unfortunately CK3 is just a far inferior, dumbed down game. The only advantages it holds over CK2 are funny 3d genetics shenanigans, and the cultural and religious hybridization systems. They most definitely DO NOT have more cultural flavor, every region is boring and same-y in CK3 because they're all just slight variations of the same core systems. The cultural hybridization system I acknowledged as being decent. My big problem with CK3 in this area is that there aren't any rulesets to turn cultural hybridization for the AI off. Specifically, I'd like to enable the AI to form any hand-crafted cultural divergences or hybridizations, but not any of the dynamic ones. So sick of seeing Finno-Swedish every fucking game.

Shallow as a puddle. They continue to create system after system which the player is rewarded most for simply not participating in. Oh, what's that? I don't fucking WANT to make my own game, I wanted to buy the game. CK2 CoAs were fucking GREAT. I based entire fucking campaign ideas around cool looking CoAs. They even thought to give every fucking province in the Middle East a European-looking CoA so that if the Muslims lost to the Crusaders, they would lose the muslim Dynastic CoA and reveal the awesome looking CoAs that were baked into the provinces. Does CK3 have this, even though they could have just copy-pasted all these CoAs over from CK2? OF FUCKING COURSE THEY DON'T
Now back to them changing things, for a long time all the famous Vikings were either gay or bisexual, which now has to be baked into the fucking characters from birth because it's problematic for homosexual to be a character trait. Eventually enough people complained about the gay vikings for it to get changed, but they went the other way with Elagabalus. People looked at the history files and AFTER people inspected them to make sure they didn't make Caesar gay or something, someone saw us looking at the history files and got all mad and then went and changed Elagabalus to be a biological female, despite the fact that he was a fucking man.

Oh and also the whole system for unique buildings and ducal capitals just means that everyone ends up going for all the same fucking provinces every single game now.

They're overly gamey garbage. They said it would diversify gameplay but 95% of the time players will just take whatever their favored path is every time over and over. At least in CK2 you just pick a focus and these events are randomized so you aren't linearly progressing through the focus the same way every fucking time.

Oh I also hate the rally system. In CK2 it was actually possible for a smaller centralized realm to punch up because they were capable of rallying their armies together more quickly, letting you quickly make progress against a larger enemy that is more decentralized. It also grossly oversimplifies civil wars, which were previously much more complicated with levies being raised all over and fighting.

First of all, they STILL haven't fixed that the inheritance priority means everyone is installing fucking women, because they fixed the fucking game laws so no one can get primogeniture and everyone has partition inheritance so all the males are already heirs.
But that pales before the fucking BROKEN Crusades that CK3 launched with. EVERY fucking time without fail a victorious holy war would be followed up by an immediate demand by the "local leaders" (unrepresented lower nobility and peasants) that their new liege face revolt or convert to their ways, which would always result in the new Crusader Queen instantly converting to the rebel religion and sometimes culture as well. In my first campaign the strongest muslim power was my fucking cousin that I installed and then instantly converted to Islam.

Although this made me realize, the Ironborn used to own huge portions of the Western coast and obviously ruled the Riverlands for a decent stretch of time. Why aren't there any Ironborn hybrid regions like Kraken Point in the North? Or the Shield Islands which they used to rule? Or Bear Island? Would have made sense for them to have made a lasting mark somewhere.

There was also Children or their cousins in Ifeqevron north of the Dothraki Sea.

That doesn't mean it didn't originally start as an Ironborn colony, though. I want to say there's an Irish suburb of Dublin (I think it's Clontarf) that started as a Viking settlement that eventually fortified itself to resist later Viking incursions and went native in the process as the decades passed. We know Seagard was an Ironborn target at some point, but it may not have started that way.

Aegon V clearly tried to sacrifice Rhaegar because he saw visions of Daenerys doing a human sacrifice and birthing dragons.
