He's not, though. That's one of the things butchered by the Theatrical Cut, but that's present in the Director's Cut.

He's an ENGINEER, and built siege engines for the French army before settling down with his wife and becoming a blacksmith.

Which explains why he's so proficient in defending from a siege, why he's educated, why he can read, and why he knows how to set-up an irrigation system.
