Why didn't Eru just kill Sauron?

Eru is only the first of Valar to come into existence and so he was the first to get his hands on the flame imperishable. He’s not an actual omnipotent or omniscient deity so he’s not entirely sure about the limits of his power. Melkor was the second Valar and without the flame imperishable he had to use his own essence to create or more accurately corrupt. Melkor knew the truth though that Eru was only God by chance. Melkor convinced Sauron of this and the more they tested it, the more true it seemed to be. The one ring was the culmination of their efforts. It was proof Eru is not the God he claims. He couldn’t destroy the ring directly, so he panicked and setup a crew expendable operation to deliver the ring to Mount Doom. If Gollum hadn’t been there, Eru would have just tossed Frodo into the fire. In fact he’d have burned the whole Shire down just to see that ring destroyed. It was the equivalent of the Epstein list with his name on it. Inevitably the truth about Eru would be revealed that although he is somewhat benevolent as long as you obey him, he is not the one true God and so he couldn’t risk trying to destroy Sauron directly.

He did. Eru destroyed the One Ring by making Gollum slip and fall and then made a strong wind from the west that blew Sauron's impotent spirit into the east.

Not anymore, Aman was separated from Arda. But also, those Leviathans aren't Morgoth's creation. Evil creatures corrupted by him hate water because of it's purity.

They might serve Morgoth but they weren't made/corrupted by him. It's widely believed they're creatures from the void beyond Eru's creation who followed Morgoth back when he was searching there for the Flame Imperishable, same as Ungoliant.
