First things first: No more 10 ep, made before airing, streaming forward shows. It wrecks the ability for a show to pivot based on feedback.
Go back to the 24 eps, broadcast TV style, 45 mins plus commercials. This makes for tighter storytelling, not to mention a smaller budget.

Star Trek : Nautilus

Unlike previous shows that require teleporting, shuttle pods, etc to travel to the planets, Nautilus is a show about a ship that can do all that, because of it's much smaller size. Go back to the "submarine in space" tropes.

Smaller crew, they specialize in rescue, recovery, and stealth missions. This allows for mini-arcs, and shifting priorities, like what voyager invisioned but couldn't quite land.

Timeline wise, make it happen 20 years after all the Picard series stuff. Far enough ahead that costume and design asthetic changes to something more streamlined like the TNG-Voy era is believable, and also long enough that we don't have to worry about hanging plot points from that show.

Star Trek : Recovery
taking place post lower decks, before picard
A hospital ship that is frequently sent to help a damaged population after the federation intervenes, or acting as a nuetral support for the wounded on both sides of conflicts. It'd be more like a medical mystery show, combined with some politics.

I'd make a show about the crew of the last Miranda-class, the crew being a bunch of failures and burnouts that Starfleet doesn't want to decommission due to varying degrees of nepotism/bad press/etc that they feel might put a spotlight on them. Most of the missions are milk runs between core worlds and starbases. The ship is in a constant state of disrepair as their dock timeslots are pushed for frontline ships. Dirty hull, scuffed up carpets, jerry rigged panels that occasionally spark, maybe even without a bridge refit so they can repair tactile switches and such. Crew standouts are a white male captain and a disgraced Ferasan diplomatic attache that routinely takes over at the tactical station but is technically not part of the crew so the captain and Ferasan can bang and become hopelessly codependant on one another.
I'd also hire filk makers to create the themesong intro and have the crew regularly "play" the music ala TNG and their classical concerts.

Final two-parter would have them intercept a ship they're hopelessly outclassed by and delaying it, being destroyed with all hands as her saucer is shattered to pieces by a direct hit, but afterward we find it was just long enough for a fleet of frontline ships to warp in and obliterate it at the colony it was on course to destroy.
